| Beer Duck |

| Materials: |

| 1 duck (about 4 LB) |

| Ingredient: |

| 3 T. of salt |
1 can of beer |

| Procedures: |
|
- Rub the interior and the exterior of the duck thoroughly
with 3 T. of salt; let it sit overnight.
- Preheat oven to 375 degrees, place the duck in the baking
dish and pour half can of the beer over the duck. Put into
the oven bake for 20 minutes, then turn it over. Pour the
rest of the beer over the duck and bake for another 20 minutes.
Raise the duck on the rack, bake 20 minutes for each side.
If the color of the duck is not golden brown, bake in broil
for another 2 or 3 minutes. Remove and drain.
- Cut the duck into bite-size pieces when cool, and arrange
the pieces on serving plate.
