| Cilantro-Almond Relish |

| Materials: |

| 1/2 C. of almond slivers |
1 small garlic clove |
| 1 C. of tightly packed fresh cilantro |
| 1 small jalapeno, minced |
1/4 C. of lime juice |
| 3 T. of sour cream |
3 T. of mayonnaise |

| Procedures: |
|
- Heat the oven to 350 degree Fahrenheit. Place the almonds
on the baking sheet and toast until golden, for about 5
minutes. Transfer to a bowl and let it cool.
- In the bowl of a food processor, combine the almonds,
cilantro, garlic and jalapeno. Add the lime juice and mix
well. Add the sour cream and mayonnaise and pulse until
they are combined. Transfer into a small bowl and garnish
with the almond slices and cilantro sprigs. Serve with shrimp.
