| Stir-Fry Crab with Garlic |

| Materials: |
|
| 2 LB. of crab |
6 C. of oil |
| 2 T. of corn starch |
|
| |
|
| Stir-fry Ingredients: |
|
| 1 t. of salt |
1/2 t. of MSG (optional) |
| 3 T. of chopped garlic |
2 T. of chopped green onion |
| 1/2 T. of chopped red hot pepper |
|
| |

| Marinade Ingredient: |
|
| 2 T. of ginger wine (see note) |
|
| |
|
| Procedures: |
|
- Rinse and drain the crabs. Cut them into small pieces
and mix with the ginger wine. Let it sit for 30 minutes.

Heat the wok then add 6 C. of oil. Mix the crab with
2 T. of corn starch and fry the crab pieces for 3-4 minutes
or till golden brown. Remove and drain. Remove the oil
from the wok; add crab and stir-fry ingredient, then stir-fry
until fragrant and mix well. Remove and serve.

of rice wine and the juice of the smashed ginger root. |
