| Vegetarian Eel (Black Mushroom) |

| 15 black mushroom |
10 green cabbage |
| 1 t. of soy sauce |
1/4 t. of MSG |
| 4 T. or corn starch |

| Sauce: |
|
| 2 T. of soy sauce |
1 T. of sugar |
| 1 T. of vinegar |
2 T. of water |

| Procedures: |
|
- Rinse the green cabbage, and blanch into boiling water,
then drain and set aside.
- Soften the dried mushrooms and cut them into long stripes,
mix them with soy sauce, MSG, and corn starch.
- Heat the oil, deep-fry the mushroom stripes till golden
brown, remove and set aside. Heat the sauce in a pan, bring
the temperature to boiling and put the mushroom into the
sauce, mix well and place in a plate, arrange the cabbage
along the edge of the plate.
